This is my first ever sweet recipe invention and it worked!
As you all know, I love to bake and as the whole world knows, if you eat too many baked goods you get fat.
So I thought I go for something that was a bit healthier. I’m trying to learn what’s good and bad for you. I mean apart from the obvious, chocolate, soft drink etc. But I’m finding it trickier to know if the things that we think are good for you are or not…
So for the moment I’m sticking with what I know, there’s no added sugar in this recipe. It’s still sweet enough, I found, because of the bananas.
So I decided to invent a muffin.
2 mashed bananas
1 cup chopped walnuts
3/4 coconut flour
1 cup SRF
1/4 cup olive oil
1/3 cup desiccated coconut
The cream from a tin of coconut cream (I used the coconut water in a smoothie)
I mixed it all together until well combined and spooned it into a muffin tin.
