Mini Breakfast Quiche

- 8 eggs
- 2 spring onion
- 4 rashers of bacon
- 2 tomatoes
- 1 cup grated cheese
- 1 cup self raising flour
- salt and pepper
- Crack the eggs into a large mixing bowl.
- Chop bacon, tomato, spring onion into small bite sized pieces, add to eggs and stir.
- Mix in salt and pepper, flour and cheese.
- Spoon evenly into 12 muffin trays.
- Bake 20 mins on 180*C
