Mini Breakfast Quiche

Ingredients
  • 8 eggs
  • 2 spring onion
  • 4 rashers of bacon
  • 2 tomatoes
  • 1 cup grated cheese
  • 1 cup self raising flour
  • salt and pepper
Instructions
  1. Crack the eggs into a large mixing bowl.
  2. Wisk.
  3. Chop bacon, tomato, spring onion into small bite sized pieces, add to eggs and stir.
  4. Mix in salt and pepper, flour and cheese.
  5. Spoon evenly into 12 muffin trays.
  6. Bake 20 mins on 180*C
