Slow Cooker Chicken Cacciatore

  • 3 tbs olive oil
  • 1 kg chicken drumsticks
  • 1 large onion, chopped
  • 1 carrots, chopped
  • 2 slices of bacon, chopped
  • 2 garlic cloves, crushed
  • 400g can diced tomatoes
  • ½ tsp brown sugar
  • 1 tbs balsamic vinegar
  • 1 tbs chopped fresh rosemary
  • 1 bay leaf
  • 250ml chicken stock
  • ½ cup pitted Kalamata olives
  • Chopped flat-leaf parsley, to garnish
  1. Heat oil on sear in slow cooker, fry chicken until browned, remove from pan.
  2. Fry onion, carrots, bacon, garlic until softened.
  3. Add all remaining ingredients (except parsley), return chicken to slow cooker.
  4. Cook on low for 5 hrs.
  5. Serve with parsley.
As I have a sear and slow cooker, I use the sear function to fry off meats and vegetables. If you do not have this function, you can do the frying in a separate pan and then add to slow cooker.
