I am still yet to tame the ravaging ‘breast feeding hunger’ beast. I’m starving, pretty much all of the time and to be honest, I’m getting a little sick of it.
I’m not one to give a shit about how much I weigh, but I DO care about how I feel. And I’m feeling soft. My belly is soft and my attitude is soft. Last night I fell asleep at 8 pm on the couch, woke myself with a start because I thought I could hear E crying, then promptly put myself to bed.
How lame.
Now, I’m not being hard on myself, I know that it takes time to adjust to everything, but he’s 5 months old now and I’m just eating, Eating, EATING! So my snacks need to get healthier.
The problem is that I LOVE CAKE! So I needed to come up with a little something that was delicious, ‘naughty’ like and good for me. Now my love of quinoa isn’t a secret, and I thought that there had to be something in that, so I gave it a go.
What I came up with was this delicious brownie-esque slice, with amazing texture.
Are you a snacker? How do you feel about quinoa in baked goods?
- 200gm dark chocolate
- ½ cup coconut oil
- 2 tsp vanilla extract
- 4 eggs
- 1 cup cooked quinoa
- ¾ cup wholemeal plain
- ¼ cup self raising flour
- 1 tsp cannamon
- Preheat oven to 180*C
- Melt dark chocolate and coconut oil in a double boiler, add vanilla.
- Allow to cool slightly, then whisk in eggs.
- Combine flours, quinoa, cinnamon, stir.
- Pour in chocolate mix.
- Stir well.
- Bake at 180*C for 20 mins.
I remember being very hungry when I was breastfeeding. A healthy cake like this is an excellent choice xx
