Banana and Walnut Loaf

Serves: 8 slices
  • 125 gm butter
  • ¾ cup firmly packed brown sugar
  • 1 tsp mixed spice
  • 2 eggs
  • 1½ cups self raising flour
  • ½ tsp bi-carb soda
  • 3 over ripe bananas
  • ½ cup sour cream
  • ¼ cup milk
  • ⅓ cup chopped walnuts
  1. Preheat oven to 180*C. Grease and line a loaf pan.
  2. Beat butter, sugar and spice until light and fluffy. Beat in eggs one at a time, until combined. Stir in flour, bi-carb and all remaining ingredients.
  3. Pour into loaf pan. Bake for about 50 mins, or until a cake skewer comes out clean.
